Didn’t we have a half-billion-egg recall just last summer? And peanut butter contamination? And the spinach, and the tomatoes? And, from the Chinese pharmaceutical and foodstuffs contingent, melamine in quite a number of items, including pet food and infant formula, to fake a high protein level?
Didn’t everybody in the House get up on their hind legs and demand more FDA field inspections, more accountability, more food safety? And now the House majority are cutting the FDA proposed budget from a modest raise proposed by the White House to less than the FDA received for this year’s operations?
Last Monday the USDA released its latest version of the Dietary Guidelines for Americans (nominally dated “2010”). I was driving home and NPR carried USDA Secretary Tom Vilsack’s speech, in which he listed a few of the new highlights: eat less, eat less food with solid fats, eat less processed food, eat more vegetables and fruits, eat less sodium.
How much less sodium? About 2300 mg or 6 grams (1 teaspoon) of table salt per day, he said, is the recommended maximum for healthy adults, in line with the long-standing National High Blood Pressure Education Program’s guidelines, which are shared by the American Heart Association and many other professional medical groups.
There’s a second lower-sodium recommendation for anyone overweight, African-American, with heart or kidney disease or high blood pressure or diabetes, and anyone middle-aged or older. This year, as the more specifically heart-health-oriented professional organizations already recommend, the USDA guidelines set the lower maximum at 1500 mg per day, or about 3 grams of table salt.
And you’d think that was great, and I do, that the USDA guidelines have finally caught up with what the medical associations have been demanding based on the overwhelming weight of studies on dietary sodium intake as it affects blood pressure, cardiovascular disease including stroke, and kidney disease.
But there are two catches hidden in the midst of all this, and I’m not even sure Vilsack was aware of it. Smaller one first: Middle-aged? How old is middle-aged?
“Fifty-one and older,” Vilsack said. Whew, I thought. Four more years before I have to start thinking of myself as middle-aged. By the time I get there, I’m hoping the standard will have gotten fudged upward by at least another decade or so.
Because, you know, if you’re not 50 yet, 51 sounds reasonable–and comfortably remote for a lot of younger adults. Which I am, thank you very much. Don’t look at me like that.
So here’s Catch-51: When I was working at the National Heart, Lung and Blood Institute back in the mid-’90s, the general working recommendation for lowering sodium to 1500 mg/day was all the other high-risk groups Vilsack mentioned…and healthy adults 40 and up. Not 51 and up.
The choice of a cutpoint at age 40 for otherwise healthy people was based on the risk data from the first three National Health and Nutrition Education Surveys, which began collecting data across the nation starting in the 1970s. The latest version collected data around 2006 and its findings were just released last spring by the Centers for Disease Control. All the NHANES studies correlate in-depth interviews about diet, exercise and lifestyle patterns, and cardiovascular history along with clinical health measurements (height and weight, blood pressure, cholesterol, urinary sodium excretion, blood iron, etc.) from thousands of ordinary Americans. Even early on, there appeared to be an independent higher risk and a greater need to lower sodium at 40 and older, all other health risk factors being equal.
But of course 40 seems too young to be middle-aged. And the USDA, which issues the Dietary Guidelines for Americans, tends to downplay certain elements of the risk statements so that no one, or at least not the agency’s chief constituents, gets upset. “Top 10 (or 7, or 5, or whatever) Superfoods” lists seem to be popping up on the covers of all the in magazines this month. If I didn’t get a headache every time I tried it, I’d be rolling my eyes.
The classic bloated diet article with the even more classic bloated promise of magic beanhood is nothing new, I realize. But “superfoods”…
The premise of calling something a superfood is that if you eat this one special food, or at least shop your way down the list of 5, or 10, or whatever’s in the article, you’ll be so much healthier than someone who eats a regular food. Right?
Usually the items on these lists of so-called superfoods turn out to be expensive exotics like dried acai berries and pomegranate juice. Both of which just happen to have heavyhitter funding and marketing efforts behind branded packaged versions of them, and the companies that have started branding and marketing them have both recently come under FDA scrutiny for overinflated and unsubstantiated health claims.
Of course you don’t have to go branded to run into wide-eyed, breathless claims about supposed superfoods. More mundane choices like the sunflower seeds, green peas and garlic touted in this LA Times food section article are also now being highlighted as the new great green hope for America.
But not for the reasons that make the most sense–that these foods are relatively unprocessed vegetables, fruits, whole grains, nuts and seeds (occasionally someone remembers to add something from the beans and pulses category too). All of this vegetation has almost disappeared from the current mostly-processed, mostly restaurant diet of the American public. The general categories now touted as superfoods contain protein, fiber, vitamins and minerals. They’re wholesome and varied if you buy them fresh (or dried) and cook them yourself. Some of them are green (and they’re supposed to be!)
That’s in stark contrast to the now-standard and really dreary burger, ketchup, fries and soda that are all made out of the same three or four overused industrial ingredients (wheat, soy, corn and salt, with a little beef scrap or so thrown in for the burger, some leftover tomato paste for the ketchup, and much less potato than you’d think in the fries). I understand how something that’s actually recognizably plant-based would seem exotic and ultrahealthy in comparison. I do. Because frankly, you could take your soy-based green crayons and color a piece of all-natural bamboo-fiber cardboard and eat that and it would be healthier than the fast food special.
But does that mean vegetables, fruits, whole grains and nuts and seeds are suddenly superfoods?

Darra Goldstein’s editorial in the Fall 2010 issue of Gastronomica calls out the schism between the “local, organic” righteousness of wineries and customers and the forgotten field workers they still exploit in the process. Worth a read, even though Goldstein doesn’t get quite far enough to suggest a solution or call for renewed political attention.

A couple of years ago my husband was rooting around our dwindling wine rack selection on a Halloween eve, right before the trick-or-treat crowd came by. It was actually starting to get genuinely chilly outside in the evenings…
“Hey, Deb–what is this stuff? Chaucer’s Mead?!” [squints at label] “Says you’re supposed to serve it fresh. How old is it?”
“I dunno. Last year? I forgot it was there.”
“Are you sure it’s still good?”
I started typing away to find out. “One of the Renaissance Faire bloggers says it’s really gross fresh and you’re supposed to let it age, but it looks like they mean the kind you make at home.”
Clearly neither of us was an expert.
Mead, of course, is a drink made by fermenting honey. I’d been vaguely aware of it ever since I was eight or nine years old and my dad handed me a copy of Howard Pyle’s The Merry Adventures of Robin Hood. (Quick, everybody, picture Errol Flynn or Kevin Costner, your preference, dressed up more or less as Kermit the Frog in a pointy hat and feather, leaping up onto a dead log with arms akimbo to shout “Ha-Ha-Ha-Ha!” at his fellows in a gratingly cheerful tone…)
I like reading about medieval and renaissance Europe, but I’ve never favored the Renaissance Faire approach–especially because you have to sew your own costume AND know all the names of the pieces AND how to lace them all together. A lot of participants get very snotty about each other’s authenticity. Which is fun, clearly, but I’d be the one they were getting snotty with. Also I’ve never wanted to be addressed as “wench” unless I had a huge frying pan handy to teach the knave who tried it some manners.
Also, after seeing my ex-brother-in-law’s home beer brewing setup (very successful, but then he’s English and knows his stout) I always thought that brewing mead at home would also involve big trash cans with burp valves (I mean, gas traps, though on reflection that’s actually no politer), attract a guaranteed parade of ants even in January (this being Pasadena), and that the stuff would come out cloudy and greenish and a little too authentically medieval for enjoyment.
So all in all, it wasn’t until I stumbled on a bottle at the Trader Joe’s while looking for a gift bottle of more conventional port that I ever considered tasting mead. It was enough of a novelty and the price was right–about $10. Then, of course, I put it in the wine rack and forgot about it for an entire year…which, it turns out, is the right thing to do.
Back at the kitchen counter my husband had finished squinting at the fine print, decided it probably wouldn’t kill or blind both of us at the same time, and was already opening the bottle to pour a sip into each of two glasses. It looked and smelled like a white dessert wine–light, clear, not at all the cloudy, beerily fermenting syrup I’d been imagining. So we decided to risk it on the count of three.
Even though it looked fine, I’m not crazy about sweet dessert wines and my husband is, so I was still prepared to wince. But whatever I was expecting, it certainly wasn’t this.
It didn’t taste like honey at all–it tasted like all the flowers the honey had been made from. Somehow the brewing and aging had unlocked all the delicate nectary flavors that had been trapped inside the honey, and the flavor kept changing and shifting with every sip. A sherry glass was plenty–it was a bit rich, another surprise, because sherry hovers around 18% alcohol, and this mead was only 10%. But it was intense and fascinating.
Just then, of course, my husband spotted the little packet of spices, like a teabag, that had been hanging around the neck of the bottle and decided he really ought to mull some of the mead with them. In five minutes, the whole downstairs smelled of nutmeg. It was too cloying for me, but he liked it. (Chorus: because he’s a boy) See, though, you can get away with that for a $10 bottle, and your wife doesn’t have to get mad at you. And there was enough left to have a little unsullied mead over the next couple of days.

A lot of recent visitors to this site have come in desperate need of ways to redeem the disappointing peaches that are all you can find in the supermarkets these days. Even in peach season. The best I can tell them is that you can microwave the fruit with a little sugar and lemon juice to bring back some of the flavor, but of course it’ll be cooked, not raw. For a couple of suggestions on how to do it and what to use it for, see my original post.
I decided to take this topic up again because the idea of microwave peach jam as your only option is probably not what most of you were hoping for. Me either, frankly. I want great, aromatic, incredibly juicy height-of-season peaches, and I want to be able to eat them with no further ado. Cooking them runs a distant second as far as I’m concerned (though the jam and compote weren’t bad, to tell you the truth–and I just made another batch in about 5 minutes yesterday with some much better peaches from my father-in-law’s backyard trees).
But back to the more usual reality for a moment:
I really don’t think you can get a crummy, mealy unripenable peach to be juicy and fabulous and still raw by nuking it–though I might be wrong; I haven’t tried the lower-power settings or “defrost” yet, and I haven’t tried a shorter time than 3-5 minutes. If you’re determined to try one of these, at least take the poisonous pit out first–you really don’t want to risk infusing the flesh (the peach’s or your own!) with cyanide.
But all that begs the real question–
Why all these @#$*Q#R&*@F….etc. etc…. mealy peaches at the height of summer in the first place?
OK, I know that’s not a dignified way to phrase it, but it calms me down without actually specifying swear words for a situation that clearly deserves it. (And I do have some decent enough swear words beginning with “R” and “F”, but “Q” is going to be a challenge. I’ll have to work on it–get out the Scrabble Cussword Dictionary; it’s probably going to be something in Latin.)
The reason I get so upset about this is I remember looking forward to peaches every summer as a kid–you couldn’t get them in winter (for that matter, it’s debatable that what you get in winter now actually qualifies as peaches). They were so good, so reliably good when they did arrive that my mother once assured my younger brother, who was little enough at the time to worry about the fuzzy peel, that they tasted “like heaven”. She was right. You wouldn’t hear angels or anything insipid like that when you bit into one. You’d get a stream of juice down your chin and flavor so intense you wanted to take it somewhere private to eat so you wouldn’t embarrass yourself.
But things have changed. My post on microwaving unripenable peaches came out last summer, when I bought what turned out to be mealy peaches so many times in a row I started wondering if it was just me or were the peaches really a lot worse than I remembered in childhood. Maybe it was just a one-year blip, a bad crop, some kind of exception in the history of peach-harvesting.
Turns out, probably not. Crummy peaches are back in stock this year–judging from the visitors’ log, my experience, pretty much everyone’s. Even here in California where they do grow peaches.
So blithely scouting the web for answers I come up with two possibles:
Either all the good peaches are being shipped overseas for astronomical prices and our supermarkets are buying the good-looking but deceptive dregs and we’re allowing it by not returning the unacceptable goods and demanding refunds
OR
All the big supermarket chains are buying imported peaches from South America and the combination of long distance storage requirements and import quarantine protocols is ruining the peaches’ ability to ripen.
Of the two, I think the idea that all our domestic peach growers are sending their entire stock of acceptably good produce overseas is unlikely. We do export some fruit but the countries that were likeliest to buy from us ten years ago (Japan and Russia come to mind) have fallen on harder times and there’s more competition from sources that are geographically closer.
On the other hand, there’s a good bit of evidence to suggest the supermarket chains have been cheaping out by importing most of their summer fruit from Argentina and Chile even when it’s summer here–and winter down there. The stores have gotten used to importing all kinds of stone fruits from Chile when it’s winter here, and they may have decided to issue longer term contracts with their distributors. It’s probably cheaper than domestic fruit even after transportation and quarantine.
The UC-Davis Olive Center has just released a report of its chemical and sensory tests on 10 California and 14 imported brands of supposedly “extra-virgin” olive oil. It concluded that many of the nationally available brands don’t meet the International Olive Council’s or the USDA’s quality standards for extra-virgin status.
The research team also reported that some newer chemical markers of fat oxidation being used in Germany and Australia matched sensory measures of low quality (fusty or rancid smell and taste) better than the standard IOC methods. It was a result almost guaranteed to raise hackles abroad.
The researchers compared the accepted IOC/USDA tests for oxidation and breakdown products with sensory panel evaluations (smell/taste/look/texture) and with a couple of new chemical assays from Germany’s and Australia’s government food quality labs. They had an Australian lab accredited for IOC tests conduct some of their assays.
Nine of the 10 California olive oils were evaluated as authentic extra-virgin oils by the sensory panels and had corresponding assay stats to confirm it.
Almost 70% or about 10 of the 14 international brands, most at least nominally Italian, failed the sensory panel evaluation and had some assay stats outside the acceptable limits for extra-virgin olive oil. Major brands that were deemed lower than extra-virgin quality in at least 2 of 3 sensory panel tests included:
Bertolli, Filippo Berio, Carapelli, Pompeiian, Colavita, Mezzetta, Mazola, Rachael Ray, Newman’s Own Organics, Safeway Select, and Whole Foods’ 365 house brand.
Surprisingly enough, Star and Kirkland Organics fared pretty well. No word yet on Trader Joe’s “Trader Giotto” olive oil–at those prices, though, I’m not holding my breath.
The producers of brands exposed by the report, along with the IOC itself, which was created by the UN in 1959 and is based in Spain, protested the research team’s methodology. Mostly they claimed that too few samples were tested to get statistically significant results, and that IOC tests find only 1% of more than 200 brands they test each year fall below extra-virgin standards. But the brands tested represent most of the common offerings for olive oil in American supermarkets, and results were reported separately for samples of each brand acquired in several cities apiece.
I don’t think, at least on a cursory glance, that the test parameters set for the study or the interpretation of assay results have been skewed purposely to favor Californian olive oils over Italian ones. Results for both were mixed and the researchers reported variations in results within the same brand–for example, some olive oils showed lowered quality in the Sacramento sample but not the San Francisco or Los Angeles ones.
What the researchers at UC-Davis found was not so much evidence of tampering (adulteration with cheaper oils like canola, though there might have been tampering with lower-grade olive oil), but rather higher than acceptable fat oxidation and rancidity due to aging, light exposure, poor (high-temperature) storage and shipping conditions, and possibly poor quality olives to start with.
What I would object to if I were going to find fault is that the study was funded by several members of California’s olive oil industry. Certainly if this were a clinical trial for a new drug instead of a food quality study, the fact that two of the study sponsors are also the producers of brands being studied would make me look twice at favorable results.
Where I think the study favors California olive oils over Italian ones is in the purchasing itself. It should be no great surprise if the imports on American shelves have been sitting there longer and were shipped under more damaging conditions and at higher cost than the California olive oils. It would also be no great surprise if many of them tested in better condition in the European labs before export than at UC-Davis’ labs months (or even longer) after they’d arrived in the US.
If the researchers had express-shipped pre-import samples of this year’s production from Europe to their labs at UC-Davis and their partners in Australia, and tested those results against similarly fresh California oils, the results might have been more to the IOC’s liking–or perhaps not. EU labeling rules allow Italy to claim that olive oil was produced there even if the olives or olive oil lots were acquired from other countries such as Tunisia or Morocco. I’m not knocking North African olives except to observe that they’re probably a lot cheaper than those grown in Italy. But even if they’re of equal quality, each delay in pressing or processing a harvest–not to mention repeat exposure to heat and light during shipping and warehousing from country to country–contributes to the breakdown of olive oil’s flavor components.
However, even if all the olive oil was pristine when tested in its country of origin, such a scrupulous comparison wouldn’t have reflected the real experience of California shoppers trying to get decent olive oil without having to drive out to an olive producer’s farm. Unfortunately, the California olive oils are not widely available in Los Angeles supermarkets (the researchers were stuck with Sacramento and San Fran for those) and most are not really being produced on a large enough scale to become national brands either. The imports are. If most of those really are losing quality through shipping and warehousing, should we be paying extra-virgin prices for them? Or should the companies ship and store them more carefully–and for less time?
Today’s (and last week’s, and the week before’s) topic is STILL the lentils-and-prunes challenge.
Before I get on a roll about lentils, I should mention that the first Prunes and Lentils post was my 101st post for this blog. I don’t know if we should celebrate, but why not. Woo-hoo! Good enough. Consider it celebrated.
It’s taken me a full two weeks to put up this post because this is where the rubber meets the road, or at least where the lentils meet the prunes. The moment of courage. And I don’t know whether it’s going to be great or whether people will go back to wondering why anyone ever let me in a kitchen. (That’s easy: because no one wanted to do the cooking themselves.)
Ordinary brownish-green lentils are kind of a workhorse ingredient in European, Mediterranean and Near East cooking (also in Indian and African cooking, though red lentils are better known). Unlike restaurant chain buffalo wings, lentils are actually rich in protein and iron, and they aren’t surreptitiously pumped up with sugar, salt and fat to entice you to overeat. The Center for Science in the Public Interest is not likely to sue, because a bag of lentils doesn’t come with a deceptive toy to con the kids. (See? we can be topical and up on the hot news of the moment even while discussing an arcane Slow Food subject like lentils).
And lentils are CHEAP–the whole point of starting this Prunes and Lentils challenge in the first place. Somehow even the big supermarkets that push shoppers to the middle aisles to buy boxes instead of actual food always carry dried store-brand lentils over near the bags of rice and split peas and kidney beans and such. It’s one of the few middle-aisle purchases that are worth it.
I don’t know if lentils have even kept up with inflation over the past 20 or 30 years, because they’re always something like $1-$1.25 for a one-pound bag. Same as when I was a student on a $20 a week food budget. And a pound makes 5-10 meals, not just one serving.
Actually, the recent agroeconomics of growing lentils in the US makes unexpectedly interesting behind-the-scenes reading for policy wonks like me. Lots of people are now clamoring for the US to change the crop subsidy laws to encourage more nutritious crops than corn, soy and wheat. Lentils are still a minor crop, but apparently the USDA introduced new marketing loans and other incentives for lentils, peas and chickpeas under the Farm Act revisions of 2002 and 2008, and exports for pulses have risen by about 45% in the last few years to India, Spain, the Philippines, and other major lentil and chickpea consumers. The rest are bought for animal feed and international food aid programs, especially those for sub-Saharan African nations.
That’s because lentils still fly under the radar here. The average annual consumption in the US is still just about a pound per person. Up from 0.8 pounds in 2008, so a 20 percent jump, but still. One pound per person in a year. If my continuation of the Prunes and Lentils Challenge posts has no other benefit to humankind, I would hope that it inspires you to buy and cook–and eat–at least one additional pound per year in a creative and satisfying way. Pass it on–Two pounds per year? At a cost of $2-3 total? We can but dream…
Of course, now that bean cuisine has become a point of pride for Meatless Mondays and other trends in eating green (if not eating local), lentils don’t just come dry in bags or bulk anymore–not glamorous enough, perhaps? If you’re upscale, you can get them precooked in little cans at your Whole Foods or steamed in vacuum packs at your Trader Joe’s, but those chic packages are much, much more expensive per meal and don’t taste as good. I frankly wouldn’t bother unless you’re on the road or camping or something and don’t have a kitchen at your disposal. Dried lentils don’t need a presoak to cook up within about half an hour even on the stove top, and they’re so easy to cook in a microwave (and avoid the watched-pot-never-boils problem) that the extra expense and time trying to find the precooked ones is usually not worth it. (And what about all that extra plastic and metal packaging? Be righteous–buy ’em dry.)
If you cook up a whole pound bag at once, you can use it throughout the week or (better, for a lot of people) freeze half of it with a bit of cooking liquid in a microwave container and save yourself some time the next time you want a batch. I keep thinking of that old “Cook Once, Eat Twice–That’s Italian!” lasagna ad (can’t remember if it was for noodles or sauce) from the 1970s. It’s a bit old-fashioned, but still a good idea for when you’re too tired to cook for real.

When I was a kid, PBS, which had made a gourmet name for itself with The French Chef, decided that if one chef was good, six or seven had to be better. Suddenly the public and cable airwaves were bursting with the Frugal Gourmet, the Galloping Gourmet, Yan Can Cook, Cookin’ Cajun, various shows with Pierre Franey and Jacques Pépin, and one…ummm…less glamorous show called Cookin’ Cheap.
This was hosted by Larry Bly and Earl “Laban” Johnson, Jr. out of Roanoke, VA–-not too far from where I grew up–and featured two viewer-submitted recipes per episode, which the guys bravely cooked and sampled on the air. At the end of each show, just like Julia Child, they sat down at the table for the tasting… and decided whose recipe had come off worse.
Now, Cookin’ Cheap was not for tenderfoots–if you couldn’t handle ingredient lists that included whole sticks of margarine and self-rising flour, or bring yourself to shop in one of the ordinary supermarket chains that had never heard of organic anything (this was the South in the ’80s), you would have done better not to watch. But if down-home cooking delivered with a touch of schadenfreude was your thing, it was a great little show.

In my actual favorite episode, Bly and Johnson hit their personal limit with a recipe that had them both making faces and apologizing to the audience that “there’s cheap… and then there’s too cheap.”
The dish in question was “Lentils ‘n’ Prunes” (you can guess the entire ingredient list). And it was indeed cheap. Unfortunately lentils, though incredibly cheap and nutritious, cook up kind of gray, especially on a semi-rural public TV station with early-’80s (i.e., yellow-ocher) set lighting. Trust me when I say the addition of mashed prunes did nothing for them aesthetically or otherwise. How on earth could they have put this on the air?
Of course, these guys didn’t have to take the blame for the recipe, and it was great entertainment to see some of the strange things your neighbors might be cooking at home and writing in to the show about with high hopes of being selected. I understand the Food Network is now copying Bly and Johnson’s reality-cooking formula shamelessly for the fall lineup…
[Actually, I didn’t realize the show had such a good run, but it started locally in 1981 and only ended its nationally syndicated run in 2002. Johnson passed away a few years before the end, but he managed to publish the Cookin’ Cheap Cookbook in 1988. Bly kept the show going with Johnson’s friend and successor Doug Patterson and has since made a couple of rescued episodes available on DVD. And the show still has fans on YouTube and — surprisingly just this March–in the New York Times.

Ah, well. Times change, horizons broaden, and we aim to challenge our palates in a sophisticated world beat kind of way even with limited cash and ingredients. The wolf may be at the door, we may be on the rice and beans yet again to make up for unreimbursed conference travel, but we are determined to do it in style–that means Indian, Moroccan, Mediterranean–French? Well, at least by not mixing plain lentils and prunes together in a hideous gray mash.
…I’m not actually sure how the French feel about lentils with prunes, or what they’d do about it if you suggested it. But I have a huge bowl of cooked lentils to deal with from a 1-lb. bag at $1.29. And a 1-lb. bag of non-sorbate pitted prunes at $2.99. Less than $5 total. And a number of ideas about how to deal with each of them, separately or together. Enough ideas that I’m probably going to have to split this post so it doesn’t turn into War and Prunes.
This, I think, is going to become my How to Cook a Wolf Challenge, 21st Century Edition.
Because I have fantasies (not many, and relatively tame though entertaining) of the Iron Chef America and Top Chef hosts announcing, for the next quickfire competition, a challenge to find three or four good ways to combine lentils and prunes in dishes where they’re the main ingredients and for which the total bill for the tasting menu comes to something like $10, including spices (prorated as used…) Can’t you just see the contestants’ faces? Take a moment to enjoy their obvious panic. The restaurant industry hasn’t trained them for this.
But seriously. What was actually behind this Cookin’ Cheap dealbreaker, other than the obvious frugality factor plus the even more obvious digestive humor that follows prunes and lentils wherever they roam?

Michael Moss’s new investigative piece, “The Hard Sell on Salt” at the New York Times, traces the strategies used by the processed food industry over the past 30 years or more to fight any regulation on the amount of salt they dump into everything.
I have wondered for years why TV chefs (Moss ticks Alton Brown on this for having shilled in an ad for Cargill, a major salt producer), the Culinary Institute of America, big-name restaurant chefs and their fans (prominently Michael Ruhlman), and the food processing industry have all pushed salt so hard and why the discussion about reducing salt always, always turns to “what can we substitute” rather than “why not just leave it out.”
It’s not as if any of these players, other than the actual salt production companies, have an intrinsic mission that requires them to sell salt.
Moss turns up a few of the answers. Not surprisingly, products like low-salt tomato sauce require actual fresh ingredients (vine-ripened tomatoes, fresh herbs) to make up the difference in flavor from the current formulas for salted jar sauces, which contain dried herbs and low-grade tomatoes and range from 450-700+ mg. sodium per serving.The low-salt sauces are more expensive to produce. On the other hand, they’re higher quality and they do actually taste good.
But that’s about the simplest case. Tomato sauce actually is made from tomatoes, whether high- or low-grade, and is therefore (if you discount the addition of starch or gum thickeners, sugar or corn syrup, spice “extractives” and preservatives in so many brands) about as close to the actual homemade product as processed food gets. Most of the major processed foods aren’t so recognizable.
Peanut butter should be in the same category as tomato sauce–something with a simple real main ingredient that tastes like what it is. And a number of smaller companies do offer unsalted natural peanut butter–peanuts-only, and it tastes just fine. But the major brands insist that if you take out any of the salt (notably, not “all”) from their formulations, you “have to” add sugar or something else to compensate for the loss of flavor. Read the major brand labels and you realize why: their peanut butters are already mixed with corn syrup sweeteners and solids, gums and emulsifiers and mono- and diglycerides and starches and fillers. The salt is there not so much to highlight the peanuts but to cover all of that extra gunk. You have to wonder whether the nutrition is reduced as well–something like the case of bologna vs. actual meat.
Particularly telling (and entertaining, from my point of view), are the taste consequences of cutting salt in some very popular products:
Even as it was moving from one line of defense to another, the processed food industry’s own dependence on salt deepened, interviews with company scientists show. Beyond its own taste, salt also masks bitter flavors and counters a side effect of processed food production called “warmed-over flavor,” which, the scientists said, can make meat taste like “cardboard” or “damp dog hair.”
I have to admit I really adored that one. My general reaction to things like Lean Cuisine, South Beach Diet, etc microwave meals-for-one is that, with so much sodium per serving (up to 1200 mg or worse) you’d be better off tossing out the “meal” and eating the box. Tastes about the same, salt’s gotta be lower, and at least you’d get some fiber. Now we know it’s true.
As a demonstration, Kellogg prepared some of its biggest sellers with most of the salt removed. The Cheez-It fell apart in surprising ways. The golden yellow hue faded. The crackers became sticky when chewed, and the mash packed onto the teeth. The taste was not merely bland but medicinal.
“I really get the bitter on that,” the company’s spokeswoman, J. Adaire Putnam, said with a wince as she watched Mr. Kepplinger struggle to swallow.
They moved on to Corn Flakes. Without salt the cereal tasted metallic. The Eggo waffles evoked stale straw. The butter flavor in the Keebler Light Buttery Crackers, which have no actual butter, simply disappeared.
Perhaps there’s a lesson here. Kellogg’s certainly not the only company that’s been selling Americans the food equivalent of the Emperor’s New Clothes. Perhaps all the food execs should be required to eat their own products, without “benefit” of salt, and preferably in front of an FDA regulatory panel or a Congressional committee?

Pyrex Warning
Many of my older posts call for microwaving recipes in Pyrex bowls or pie plates. But my plates are the old Corningware USA ones made of borosilicate or lab-grade glass–feels warmer and “clicks” rather than clanks. The new “Pyrex” plates and casseroles — made outside the US — are generally made of much weaker soda lime (“coke bottle”) glass. That can crack or even explode with any temperature fluctuation (Consumer Reports, Jan. 2011). DON’T USE THEM.Go with microwaveable and oven-safe stoneware instead.
