I want to give a quick thanks to Dr. Marion Nestle, who took the time to let her readers and colleagues know about Sunday’s Dietary Guidelines post in her Twitter feed and on her blog, foodpolitics.com, which I’ve read with interest ever since starting this blog. The response has been overwhelmingly positive and I appreciate it very much.

USDA Dietary Guidelines released…a full year later

The Dietary Guidelines Advisory Committee’s scientific report, essentially the major draft of the USDA “Dietary Guidelines for Americans” guidelines, was finished last February. The Dietary Guidelines for Americans, 2015-2020 has finally been released in its official form to the public–but it’s only available online at health.gov as of this week, with promises of an eventual PDF.

To that end, because the Health.gov site doesn’t yet have a downloadable version, I’ve pulled the text and images of the final “Dietary Guidelines for Americans 2015-2020” into a quick-and-dirty two PDFs you can download below for free. It’s not perfect–the pages don’t all flow with gorgeous layout and some of the graphics were so oversized I had to kind of select-cut-and-paste them in sections to get the charts to fit. I think I’ve got it all in there, though, including most of the helpful nutrition and diet charts in the appendices (with notes where I didn’t catch on that there was more to a chart than first appeared).

What can I say–“Enjoy.” Ummm….well, anyhow, here they are:

What was the holdup? What are the differences from the health-basis-only recommendations of the DG Advisory Committee’s version last year?

Given the shoddy job major media gave the advisory committee’s scientific report last winter and spring, perhaps the best thing to do this time around is skip the media coverage hyperbole and compare the two reports directly and see what gives.

Professor Marion Nestle digs in with dissatisfaction as to some of the likely buyoffs this time around–she deems that the big meat, egg, sugar, etc. producing industries have won some victories in what wasn’t said. She also complains, as I do, that the online version is full of stupid bells and whistles. It’s hard to navigate, there are a lot of windows and figures that are actually slide shows and you have to know to click on them to get the rest of the information. Hopefully the PDFs above will be more readable.

Nestle’s take is more political than mine (for a change? not really). She notices more of the inconsistencies with naming food categories only when they’re favorable, and using nutrient names (sugar, saturated fat, sodium) as substitutes for the big-business food categories that are poor nutritionally.

I’m less incensed about most of that– and ironically a little more optimistic about what was included. Continue reading

Government nutritional estimates for “mixed dishes”–where do they come from?

The federal “MyPlate” program has expanded its consumer information on dietary guidelines but some of it looks suspiciously old-hat and soft on nutritional crime, very much in keeping with the USDA’s traditional approach of pandering to the processed food industry. I stumbled across it while helping my daughter find school lunch nutrition information for her latest science project, which was to analyze her new public school’s lunch program.

Of course, my 7th grade daughter’s reaction to her first day in a real live public school cafeteria last month was shock. Because she’s diabetic and vegetarian, we agreed the best strategy for her would be to bring her standard lunch from home–PBJ on whole wheat with an apple. She had trouble the first day with the routine–shove through the cafeteria line, squeeze in at a table, shovel down food, run for the bell.

What did the other kids eat? I asked. “They ate crap,” she answered without so much as a pause. “Pizza and french fries, stuff they can eat in about five minutes while gossiping with their friends. They hardly even notice.”

Now–as I’ve said before–peanut butter and jam on whole wheat is not gourmet, but it’s fairly nutritious (beats Oscar Meyer bologna for protein, believe it or not) and with a small apple, it’s reasonably worthwhile and you can eat it fairly quickly–certainly within 15 minutes, if you can shove through the cafeteria line and find a seat. If you make friends, as my daughter quickly did, you can even find some time for gossiping and having fun. And it costs less than a dollar and takes less than 5 minutes to pack at home. The school lunch is $2.35, and yes they do offer apples and some sort of packaged salad stuff and skim milk, but as my daughter noticed, few of the kids actually eat those items. Maybe the milk–well, at least offering the fresher food is a start.

Still–“crap” is not that far off. Pizza AND fries? A tough act to follow with anything but gallbladder surgery at 40.

And as she looks at the school menus online for September–they declare that they follow the USDA school nutrition guidelines–we notice a lot of things that aren’t really sound thinking from a diabetic’s point of view. A lot of menus that don’t come close to matching the ChooseMyPlate.gov guidelines, which call for half the plate to be vegetables and fruits (in that descending order of quantity), a quarter of the plate protein, a quarter complex carbohydrate.

“There’s a lot more meat,” she says. “Actually, my friend had the chicken patty today and spat it out. She said it wasn’t chicken. My other friend said it was, it was just cafeteria chicken.” Sounds like some of her new friends have a better take on the school food than the government does. My bet–the chicken patty is like standard bologna, only about half is anything that actually came from a chicken–including fat and skin–and the rest is probably starchy and high-salt fillers.

So, speaking of food that really isn’t as good as it seems…

The ChooseMyPlate.gov brochure on “mixed foods”, which is what I promised up at the top, might be part of the same sad thing. Here’s the sample chart they offer for things like pizza, lasagne, double cheeseburgers, burritos…that are supposedly hard to judge on nutrition.

Any takers on this one? My first impression is that the calorie counts are probably low–maybe as little as half–for a standard chain restaurant or frozen-entree serving of any of these items. Probably because a USDA recommended standardized “portion” for nutrition labeling purposes is very small compared with what people are actually eating and what companies are serving.

My second impression is–fruit servings? for pizza? who are they kidding, and why is this column even in here? Fruit is optional–it’s a carb. Nonstarchy vegetables with some actual vitamins and fiber are required eating. It’s pretty obvious from the table that the vegetables are pretty scant in this list of “mixed foods” too–mixed in this case seems to mean starches and fats plus some form of meat.

And what isn’t listed–the salt and fat and total carb. The fiber, vitamins and minerals. Most of this food is high in stuff that should be low, and low in stuff that should be high.

On second thought, maybe we should just read down this table for suggestions on what not to serve.

School nutrition opinions and the state of things now

In today’s LA Times, David Just and Brian Wansink weigh in on the behavioral fallout of revamping school cafeteria food choices by eliminating commercial fast food and flavored milks. They contend that giving kids a choice of foods increases the chance that kids will choose healthy foods at least some of the time instead of tossing out the tray and sneaking pizza orders into school.

A few of their observations–that fresh fruit is more appealing and gets chosen more often when placed in an attractive bowl right by the cash register checkout–make sense. Cafeterias could do more to arrange the choices they have in keeping with the way restaurants from banquet-style buffets to the corner Starbucks have found effective. Put the fruit right by the cash register and that impulse-buy instinct will kick in. Now if only they had a better strategy for vegetables. Or at least a more nutritious and less dismal choice than carrots vs. celery.

But what really struck me in this article wasn’t the fact that Wansink, the author of Mindless Eating: Why We Eat More Than We Think, and his colleague David Just seem to be condoning the continued availability of fast food in public school cafeterias.

The most striking thing about this article on an overchewed topic was the picture at the top of the page: a high school cafeteria display with single-serving “Uncrustables” white-bread sandwiches (Smucker’s brand) on a shelf that was labeled “Fresh Apple Slices” (none in sight, but I bet they would have been branded in baggies as well) and little bags of baby carrots (couldn’t tell which brand, only that there was one).

I know the existence of carrots is an improvement. I know that sandwiches are generally less awful than pizza and fries. But the bagginess of the whole thing–wrapping something in plastic pouches at a factory makes it officially dead and stale. Not fresh.

The apples, if they actually exist at that school, are already cut into pieces that are either browning or have had to be treated with ascorbic acid (well, that would be the best option, and would sneak in a little vitamin C) or another anti-browning agent. The sandwiches on white gummy-looking bread have the crusts removed. It’s as though the kids in the cafeteria were four years old and couldn’t handle biting into a whole apple or peeling an orange or eating a sandwich on actual bread with crusts (and I mean really, what about all those hamburger buns?) It’s disheartening.

I realize a lot of school cafeterias got rid of their dishwashers as well as their full-function kitchens a generation ago. But they could be offering food that looks and tastes fresher and less like it had been sitting for ages in a vending machine.

If you’re going to offer sandwiches in the cafeteria, why not let the kids choose bread and fillings at a sandwich line? It would take a staff person to assemble them, most likely for reasons of discipline as well as hygiene, but the food would look fresher and probably be fresher, and the act of choosing and ordering a bespoke sandwich would probably make it more appealing than taking another soulless packet off the shelf. There’d be less plastic trash too.

The labor issue–there’s always a labor issue with hand-assembled sandwiches, assuming you’re not going to let the kids make their own. But you could, maybe as much as once a week, let different clubs at the school take turns running a sandwich line as a fundraiser, get a free lunch that day themselves and charge a nickel or so above the standard lunch price for their cause. Or do a school-wide chili cookoff event once a year with different teams competing. It would be a lot more fun than the dim “choice” of celery vs. carrots (and of course 89% of students will choose carrots over celery–carrots are faintly sweet, while celery is overtly bitter even though it’s a savory bitter).

If the school isn’t already shackled by a year-long exclusive contract with a food-packaging company like Smucker’s, offering a student-run sandwich line once in a while might actually come out less expensive and wasteful.

School lunch vs. Congress: Ketchup all over again

The House and Senate’s reconciled spending bill–surprise, surprise–now strips out the new USDA rules on school lunches. You know, the new rules to lower sodium, limit potatoes as in french fries, and debunk the idea that the smear of tomato paste on a commercial frozen pizza slice sold to the school through a fast food concession contract somehow counts as a vegetable. Those rules.

The spending bill is due for a final vote later this week and you won’t be surprised at all to find that the “no new lunch” provisions come primarily from the hands of a number of Republicans in both houses. Worse, one of their chief arguments is that because vegetables other than potatoes, corn and other starches are expensive, the schools shouldn’t have to comply.

But who made–and keeps making, take a look at the other parts of the spending bill–greens so much more expensive to grow than wheat, corn, soy, potatoes…the big heavily-subsidized commodity crops? You got it.

The shamelessness is everywhere though. While trying to verify the details of the bill in the Washington Post article, I looked up “House Budget Committee” (which isn’t exactly it; the official spending bills for the House come from the Appropriations Committee, but I wasn’t thinking official terminology first thing before coffee this morning).

I was disgusted to find an official House committee page apparently dedicated to singing the outsized praises of one party’s platform rather than to presenting actual public business–bill texts and status, committee assignments and mandate–conducted by and representing the work of all the members of the committee, whatever their party affiliations.

The Budget Committee’s chair, Paul Ryan, has commissioned a web site so grossly propagandist and silly it should be a public embarrassment. Go visit it. Am I wrong? Or does almost every single item on the front page mention Paul Ryan prominently in tones that suggest he led the Battle of the Bulge or launched NASA or some equally visionary achievement?

Given his performance in the GOP debates and the many polls that show his true popularity among voters, I shudder to think how much he had to spend out of the committee budget to get someone to put up such a flattering page.

If the House wants budget cuts, maybe this is where the supercommittee (and is that ever an overrating) should start. And then they should get back to work and put some actual food on the tables in public schools. $6.8 billion to improve school lunches and the federal breakfast program for low-income students is a pittance. It’s not enough to do everything students need, but it would do a lot if it weren’t wasted battling the processed food lobbyists over salt, potatoes, pizza, tomato paste and ketchup.

As it is, the food lobbies are likely to win this round in the legislature, or so the newspapers predict.

What power is left? Your purse. Your vote. Your phone calls to your senators and congressional representatives.

Likewise your ability not to pay for garbage. Boycott frozen pizza. Boycott french fries. Boycott soda. Stop buying this stuff for home and tell your kids why. These shameful food substitutes are a lot more expensive than they look. Pack your kids a real lunch–it could be leftovers or a sandwich, but pack something with protein, a little whole-grain starch, and actual vegetables. Maybe a fruit. Keep it cheap and whole–apples/oranges, not passionfruit.

I would also like to see students whose families can afford it to chip in by bringing a bag of apples to school, or a bag of carrot sticks, or a can of tuna, or a pound of cheese or a loaf of bread. Not every day, but every week or month. I have the idea that if all of that donated food went into a kitty for the low-income students, they might eat better than the way they do now.

Who the federal spending cuts are hurting: Food pantries

The LA Times reported today on Southern California’s food pantries.  Demand in Los Angeles and Orange County has gone up 70 percent since 2008. Between LA and OC, the food banks are reaching more than half a million people. The LA Regional Food Bank alone is serving something like 1.25 million pounds of food a week. They’ve received increased contributions in that time from the USDA and FEMA, quite a change from the shameful 50 percent cuts the USDA made to food bank aid in the mid-2000s during the Bush administration, but that’s being considered emergency funds, not standard support. Ripe for cutting the moment Obama decides to try and look flexible with the Republican House leaders once again.

And thanks to the repeated budget cuts to domestic federal spending while military spending and bank bailouts continue to be preserved, even that emergency aid is now down considerably from last fall. But the demand isn’t.

The shortfall has to be made up in private contributions. But a lot of the shortfall is just that–shortfall.

The new MyPlate icon–fantastic or plastic?

Everyone in the food press seems to be weighing in on the new replacement for the much-cursed USDA Food Pyramid in all (both?) its glorious confusion and obfuscation of real nutritional goals that might have (and should have) undermined the beef, corn, pork, corn, sugar, corn, and soy industries if they’d ever been presented honestly.

So where does that leave us? With ears of fresh corn that are more than 50 cents apiece in Los Angeles supermarkets, and the new…

Already, the USDA’s MyPlate web site is in a certain amount of branding trouble (and of course, that’s what counts most in America): the Texas DMV had already bagged “MyPlates.com” for its vanity license plate division (highly unappetizing), and Livestrong.com already has its own well-established “MyPlate” food calculator and fan base. And those items come up first on Google searches. As in, the whole first page or more. The government site ranks way down the list and had to water down the impact of its original name choice with “choose” just to get a URL. Can it elbow out the competition just by bolding the “MyPlate” part?

What really counts are the food and nutrition opinion maker comments, though. And a lot of those are detracting in a nitpicking way that I think kind of misses the point.

The first thing they all have to say is that the plate looks dumbed down. Forgive me, but wasn’t the Food Pyramid’s unreadable and unusable design a large part of the problem? The MyPlate icon is simpler and more direct, and it names real food groups, not “Big Mac” or, on the haute side of things, any of Ferran Adrià’s foams. No wonder foodies and populists alike are wondering what it has to do with them.

A small sampling of the main arguments:

MyPlate: The Food Pyramid for dummies? (LA Times): Dr. Andrew Weil and others discuss what’s still wrong with the new icon. Weil says “fruits” could still include fruit juice, which is usually a useless sugar bomb in comparison with whole fruit, and he worries that the protein section, which comes with a guideline to eat 8 oz. of fish per week, might encourage unthinking people to increase their mercury intake since swordfish is on the guideline menu, as are some of the generally overfished popular species of fish. Weil’s not wrong about the fruit juice vs. actual fruit, but his hand-wringing about fish is really geared for well-off readers who can afford to eat much of it. Age, salt and the new USDA dietary guidelines

Last Monday the USDA released its latest version of the Dietary Guidelines for Americans (nominally dated “2010”). I was driving home and NPR carried USDA Secretary Tom Vilsack’s speech, in which he listed a few of the new highlights: eat less, eat less food with solid fats, eat less processed food, eat more vegetables and fruits, eat less sodium.

How much less sodium? About 2300 mg or 6 grams (1 teaspoon) of table salt per day, he said, is the recommended maximum for healthy adults, in line with the long-standing National High Blood Pressure Education Program’s guidelines, which are shared by the American Heart Association and many other professional medical groups.

There’s a second lower-sodium recommendation for anyone overweight, African-American, with heart or kidney disease or high blood pressure or diabetes, and anyone middle-aged or older. This year, as the more specifically heart-health-oriented professional organizations already recommend, the USDA guidelines set the lower maximum at 1500 mg per day, or about 3 grams of table salt.

And you’d think that was great, and I do, that the USDA guidelines have finally caught up with what the medical associations have been demanding based on the overwhelming weight of studies on dietary sodium intake as it affects blood pressure, cardiovascular disease including stroke, and kidney disease.

But there are two catches hidden in the midst of all this, and I’m not even sure Vilsack was aware of it. Smaller one first: Middle-aged? How old is middle-aged?

“Fifty-one and older,” Vilsack said. Whew, I thought. Four more years before I have to start thinking of myself as middle-aged. By the time I get there, I’m hoping the standard will have gotten fudged upward by at least another decade or so.

Because, you know, if you’re not 50 yet, 51 sounds reasonable–and comfortably remote for a lot of younger adults. Which I am, thank you very much. Don’t look at me like that.

So here’s Catch-51: When I was working at the National Heart, Lung and Blood Institute back in the mid-’90s, the general working recommendation for lowering sodium to 1500 mg/day was all the other high-risk groups Vilsack mentioned…and healthy adults 40 and up. Not 51 and up.

The choice of a cutpoint at age 40 for otherwise healthy people was based on the risk data from the first three National Health and Nutrition Education Surveys, which began collecting data across the nation starting in the 1970s. The latest version collected data around 2006 and its findings were just released last spring by the Centers for Disease Control. All the NHANES studies correlate  in-depth interviews about diet, exercise and lifestyle patterns, and cardiovascular history along with clinical health measurements (height and weight, blood pressure, cholesterol, urinary sodium excretion, blood iron, etc.) from thousands of ordinary Americans. Even early on, there appeared to be an independent higher risk and a greater need to lower sodium at 40 and older, all other health risk factors being equal.

But of course 40 seems too young to be middle-aged. And the USDA, which issues the Dietary Guidelines for Americans, tends to downplay certain elements of the risk statements so that no one, or at least not the agency’s chief constituents, gets upset. Is Extra-Virgin Just a Fancy Label?

The UC-Davis Olive Center has just released a report of its chemical and sensory tests on 10 California and 14 imported brands of supposedly “extra-virgin” olive oil. It concluded that many of the nationally available brands don’t meet the International Olive Council’s or the USDA’s quality standards for extra-virgin status.

The research team also reported that some newer chemical markers of fat oxidation being used in Germany and Australia matched sensory measures of low quality (fusty or rancid smell and taste) better than the standard IOC methods. It was a result almost guaranteed to raise hackles abroad.

The researchers compared the accepted IOC/USDA tests for oxidation and breakdown products with sensory panel evaluations (smell/taste/look/texture) and with a couple of new chemical assays from Germany’s and Australia’s government food quality labs. They had an Australian lab accredited for IOC tests conduct some of their assays.

Nine of the 10 California olive oils were evaluated as authentic extra-virgin oils by the sensory panels and had corresponding assay stats to confirm it.

Almost 70% or about 10 of the 14 international brands, most at least nominally Italian, failed the sensory panel evaluation and had some assay stats outside the acceptable limits for extra-virgin olive oil. Major brands that were deemed lower than extra-virgin quality in at least 2 of 3 sensory panel tests included:

Bertolli, Filippo Berio, Carapelli, Pompeiian, Colavita, Mezzetta, Mazola, Rachael Ray, Newman’s Own Organics, Safeway Select, and Whole Foods’ 365 house brand.

Surprisingly enough, Star and Kirkland Organics fared pretty well. No word yet on Trader Joe’s “Trader Giotto” olive oil–at those prices, though, I’m not holding my breath.

The producers of brands exposed by the report, along with the IOC itself, which was created by the UN in 1959 and is based in Spain, protested the research team’s methodology. Mostly they claimed that too few samples were tested to get statistically significant results, and that IOC tests find only 1% of more than 200 brands they test each year fall below extra-virgin standards. But the brands tested represent most of the common offerings for olive oil in American supermarkets, and results were reported separately for samples of each brand acquired in several cities apiece.

I don’t think, at least on a cursory glance, that the test parameters set for the study or the interpretation of assay results have been skewed purposely to favor Californian olive oils over Italian ones. Results for both were mixed and the researchers reported variations in results within the same brand–for example, some olive oils showed lowered quality in the Sacramento sample but not the San Francisco or Los Angeles ones.

What the researchers at UC-Davis found was not so much evidence of tampering (adulteration with cheaper oils like canola, though there might have been tampering with lower-grade olive oil), but rather higher than acceptable fat oxidation and rancidity due to aging, light exposure, poor (high-temperature) storage and shipping conditions, and possibly poor quality olives to start with.

What I would object to if I were going to find fault is that the study was funded by several members of California’s olive oil industry. Certainly if this were a clinical trial for a new drug instead of a food quality study, the fact that two of the study sponsors are also the producers of brands being studied would make me look twice at favorable results.

Where I think the study favors California olive oils over Italian ones is in the purchasing itself. It should be no great surprise if the imports on American shelves have been sitting there longer and were shipped under more damaging conditions and at higher cost than the California olive oils. It would also be no great surprise if many of them tested in better condition in the European labs before export than at UC-Davis’ labs months (or even longer) after they’d arrived in the US.

If the researchers had express-shipped pre-import samples of this year’s production from Europe to their labs at UC-Davis and their partners in Australia, and tested those results against similarly fresh California oils, the results might have been more to the IOC’s liking–or perhaps not. EU labeling rules allow Italy to claim that olive oil was produced there even if the olives or olive oil lots were acquired from other countries such as Tunisia or Morocco. I’m not knocking North African olives except to observe that they’re probably a lot cheaper than those grown in Italy. But even if they’re of equal quality, each delay in pressing or processing a harvest–not to mention repeat exposure to heat and light during shipping and warehousing from country to country–contributes to the breakdown of olive oil’s flavor components.

However, even if all the olive oil was pristine when tested in its country of origin, such a scrupulous comparison wouldn’t have reflected the real experience of California shoppers trying to get decent olive oil without having to drive out to an olive producer’s farm. Unfortunately, the California olive oils are not widely available in Los Angeles supermarkets (the researchers were stuck with Sacramento and San Fran for those) and most are not really being produced on a large enough scale to become national brands either. The imports are. If most of those really are losing quality through shipping and warehousing, should we be paying extra-virgin prices for them? Or should the companies ship and store them more carefully–and for less time?

Prunes and Lentils III: The Lentil Variations

Today’s (and last week’s, and the week before’s) topic is STILL the lentils-and-prunes challenge.

Before I get on a roll about lentils, I should mention that the first Prunes and Lentils post was my 101st post for this blog. I don’t know if we should celebrate, but why not. Woo-hoo! Good enough. Consider it celebrated.

It’s taken me a full two weeks to put up this post because this is where the rubber meets the road, or at least where the lentils meet the prunes. The moment of courage. And I don’t know whether it’s going to be great or whether people will go back to wondering why anyone ever let me in a kitchen. (That’s easy: because no one wanted to do the cooking  themselves.)

Ordinary brownish-green lentils are kind of a workhorse ingredient in European, Mediterranean and Near East cooking (also in Indian and African cooking, though red lentils are better known). Unlike restaurant chain buffalo wings, lentils are actually rich in protein and iron, and they aren’t surreptitiously pumped up with sugar, salt and fat to entice you to overeat. The Center for Science in the Public Interest is not likely to sue, because a bag of lentils doesn’t come with a deceptive toy to con the kids. (See? we can be topical and up on the hot news of the moment even while discussing an arcane Slow Food subject like lentils).

And lentils are CHEAP–the whole point of starting this Prunes and Lentils challenge in the first place. Somehow even the big supermarkets that push shoppers to the middle aisles to buy boxes instead of actual food always carry dried store-brand lentils over near the bags of rice and split peas and kidney beans and such. It’s one of the few middle-aisle purchases that are worth it.

I don’t know if lentils have even kept up with inflation over the past 20 or 30 years, because they’re always something like $1-$1.25 for a one-pound bag. Same as when I was a student on a $20 a week food budget. And a pound makes 5-10 meals, not just one serving.

Actually, the recent agroeconomics of growing lentils in the US makes unexpectedly interesting behind-the-scenes reading for policy wonks like me. Lots of people are now clamoring for the US to change the crop subsidy laws to encourage more nutritious crops than corn, soy and wheat. Lentils are still a minor crop, but apparently the USDA introduced new marketing loans and other incentives for lentils, peas and chickpeas under the Farm Act revisions of 2002 and 2008, and exports for pulses have risen by about 45% in the last few years to India, Spain, the Philippines, and other major lentil and chickpea consumers. The rest are bought for animal feed and international food aid programs, especially those for sub-Saharan African nations.

That’s because lentils still fly under the radar here. The average annual consumption in the US is still just about a pound per person. Up from 0.8 pounds in 2008, so a 20 percent jump, but still. One pound per person in a year. If my continuation of the Prunes and Lentils Challenge posts has no other benefit to humankind, I would hope that it inspires you to buy and cook–and eat–at least one additional pound per year in a creative and satisfying way. Pass it on–Two pounds per year? At a cost of $2-3 total? We can but dream…

Of course, now that bean cuisine has become a point of pride for Meatless Mondays and other trends in eating green (if not eating local), lentils don’t just come dry in bags or bulk anymore–not glamorous enough, perhaps? If you’re upscale, you can get them precooked in little cans at your Whole Foods or steamed in vacuum packs at your Trader Joe’s, but those chic packages are much, much more expensive per meal and don’t taste as good. I frankly wouldn’t bother unless you’re on the road or camping or something and don’t have a kitchen at your disposal. Dried lentils don’t need a presoak to cook up within about half an hour even on the stove top, and they’re so easy to cook in a microwave (and avoid the watched-pot-never-boils problem) that the extra expense and time trying to find the precooked ones is usually not worth it. (And what about all that extra plastic and metal packaging? Be righteous–buy ’em dry.)

If you cook up a whole pound bag at once, you can use it throughout the week or (better, for a lot of people) freeze half of it with a bit of cooking liquid in a microwave container and save yourself some time the next time you want a batch. I keep thinking of that old “Cook Once, Eat Twice–That’s Italian!” lasagna ad (can’t remember if it was for noodles or sauce) from the 1970s. It’s a bit old-fashioned, but still a good idea for  when you’re too tired to cook for real.
