…and Other Lessons from the Fillo Stratum

Two or three weeks ago I got a frantic email from the assistant at my daughter’s Hebrew school: could I lead a cooking session for the 8th graders for an hour that Sunday?

Teens and preteens are not my specialty–I have a friend who’s really terrific with them; she’s an 8th grade and high school teacher and would rather deal with kids than write. I’m the other way around, and my own kid’s turning 13 very soon. Very soon.

Suffice it to say, my answer probably should have been, “Who me? Are you off your nut? Cook with preteens in only an hour?”

And then I thought–but wait. Fillo. It’s inexpensive (a big plus), it’s  easy enough to fold, it’s almost (if you squint) kind of a craft.  Like origami. Make some tasty and quick fillings for it (though no nuts–schools have gotten annoyingly leary of anything with nuts. How are you supposed to teach baklava? Eh? Eh???) and let the kids go to town, a couple of sheets of fillo apiece in the synagogue kitchen. An hour should do it, and it’s a cool, sophisticated food to know how to make–very different from the standard summer camp challah with blue or green food coloring.

So…I bought a couple of packets of fillo (about $2.69 for a roll of 20-24 sheets), a couple of pounds of loose-frozen spinach, an onion, some garlic, a bottle of olive oil and another bottle of canola oil (for the sweet fillings), a packet of dried apricots, a packet of dried figs, some farmer cheese (mistake, doesn’t taste that good; stick with ricotta) and some feta. And some dill and scallions I had at home. Also a lemon or two. I left the fillo in the fridge overnight to thaw slowly the way you’re supposed to, and not the way I usually do (i.e., take the thing out of the wrapper and let it sit an hour on the counter and then wonder why it cracks when I rush to unroll it).

I made the fillings the Sunday morning in a microwaver’s frenzy of immense efficiency:

  1.  Nuke a stick of unsalted butter in a bowl, pour it into a snaplock container.
  2. Thaw the spinach on a plate–4 minutes on HIGH. Take it out.
  3. Dump the dried apricots in a bowl with water to cover and a saucer on top–3 minutes. Meanwhile, start squeezing the spinach dry, and I mean dry, in handfuls over the sink. Nothing worse than soggy spanakopita. Except maybe soggy pizza.
  4. Take the apricots out, put in the bowl of figs with the stems cut off, some water and a lid, 3 minutes for them.
  5. Blend the apricots with a little sugar and water and lemon juice to make a thick paste. Get it out of the food processor and pack it in a disposable container with a lid.
  6. Do the same thing for the figs, only no sugar necessary.
  7. Rinse out the food processor, stick the scallions, wild thyme, fresh dill and basil in and chop them fine, drop in the spinach, a fat clove of minced garlic, and the feta. Pack that too.
  8. Grab all the bags with the goods and don’t forget the oils and the butter and the fillings and the extra feta and farmer’s cheese just in case there’s time to make some cheese-only filling there and somebody wants it. …

I hustled, I got to the synagogue kitchen on time, I set up stations around a stainless steel work table–foil sheets at each place, paper bowls with a dab of melted butter and a pour of oil, plastic baggies to go over everyone’s hands instead of pastry brushes, the carefully unrolled fillo under plastic wrap. The oven–on. The fillings–ready to rock. And then I waited. And waited.

An hour really would have been enough time for that class. But none of the kids showed up for the first 20 minutes because it was also the day the photographers were herding all the classes out into the basketball court area for graduation photos. So when they finally straggled in, all eight–and surprisingly, three of them were boys–I made them wash their hands and then set them to work.

The first thing I did was hand out individual sheets of fillo and pointed out that they were nearly as thin and tearable as tissue paper. They were all surprised when they saw it. None of the kids, who’d been cooking all year and who had attended a lot of bar and bat mitzvah celebrations, had seen fillo “in the raw”.

I got them started on spanakopita triangles–also known sometimes as bulemas (Greek root found here; you’ve heard of bulimia, right? Didn’t mention that connection, of course. You would never want to get into that with a batch of preteens. Don’t get too disturbed, though. The rough translation as used in Hebrew is “appetizers” or “things to gobble”. Of course, in Israel “bulmus” is also what they call anything like the American after-Thanksgiving shoppers’ frenzy or otherwise a run on the stock market…so much for appetites gone hog wild…)

I naturally thought fillo triangles would be a cinch for the boys especially–you do it the same way you fold a paper football and try not to get caught in class. Only with a little more butter and olive oil involved, and hopefully no punting in the kitchen, because I wasn’t gonna clean it up for them when the spanakopita went flying.

Here came the second generational surprise, though: none of the kids, not even the boys, had any idea how to fold a basic paper football! They’d never done it. Paper airplane? I asked desperately.  Continue reading

Three years ago I developed almond-meal based hamantaschen for my daughter, who had been diagnosed with Type I diabetes only a couple of weeks earlier and needed something that was low enough in carb that (at the time, anyway) she could actually have one or two when all the other kids were having theirs and without having to get an extra shot of insulin.

Almond meal has only about one-fourth as much carbohydrate per cup  as wheat flour, so it seemed like a good substitute. To our surprise, although the dough was a little finicky to work with, the hamantaschen came out tasting pretty good, and they were indeed pretty low carb, about 4-5 grams per mini-hamantaschen. Granted, they were also pretty small, but it was a symbolic triumph in the first few weeks and made us all feel like being diabetic wasn’t going to be the end of having fun.

Now that my daughter is on an insulin pump, getting an extra shot is no big deal, though in our experience the pitfall is that it’s now just a little too easy, especially for a preteen, to “eat anything you want, at any time, without thinking about it, as long as you program the insulin for it” which is one of the less responsible marketing messages in Medtronic’s brochure for teenagers (note: the pump itself is pretty good, but it still doesn’t mean you don’t have to be careful about what you’re eating). Those sour gummy heart candies the teacher handed out for snack earlier this week and left on my daughter’s desk, for instance….well, candy never seems like as much food as it really is, and I think my daughter gained a valuable lesson when she added up what she’d really eaten…she wouldn’t be the first one.

It’s always good to have a general plan in place for holiday eating so you don’t overdo the treats or eat an entire meal’s worth of carb in just a few cookies or candies or whatever…what can I say, we’re working on it.

Still. In the last year or two I’ve mostly gone back to making standard hamantaschen based on Joan Nathan’s classic cookie-dough recipe, which I like a lot and which looks and tastes much, much better than the dry, pasty-white horrors at the annual Purim carnival.

What I like about the standard flour-based recipe, other than that it tastes and looks good and is easy to work with, is that I can roll the dough out very thin and get crisp, delicate hamantaschen that are a decent cookie size but still hold together nicely and are not extravagantly carb-laden, particularly if the fillings are reasonable and you don’t eat ten at a time (the big challenge). They’re not as low-carb as the almond meal ones, but they still work out okay–about 7 grams apiece for a 1.5-2″ cookie. They taste good even made with pareve (nondairy) margarine instead of butter.

The LA-area idea of hamantaschen usually involves M&Ms, colored sprinkles, anything completely artificial. I bet gummy sour hearts (this afternoon’s culprit) would be a huge hit too. I don’t think they’ve heard of either prune or poppyseed out here in at least a generation.

Traditional fruit or nut fillings are a much more decent bet for carb, and they taste better (and look nicer too, because I’m not 6 years old and don’t insist on rainbow colors anymore). They’re also easy to make from scratch in a microwave or on the stove top so that you can decide how much sugar to put in them. Continue reading

The heady scent of new-crop oranges

I’ve posted on making impromptu microwaved marmalade before. It works beautifully–5 minutes total!–with sliced kumquats, but I haven’t had as much success with standard navel orange peel–until now. This week my local Trader Joe’s had big bags of organic oranges and when I brought one home I discovered something I’ve never come across before.

It must be the new crop, I think. I don’t have a great sense of smell out here in Los Angeles, but even I can tell something’s really different about these oranges. Southern California is specialty-citrus country, with five or six varieties of tangerines parading through the grocery stores and farmers’ markets all winter long, and beautiful, strange “Buddha’s hand” citrons appearing in December. With all that going on, not to mention the blood oranges and pomelos (which I actually don’t like) and cara caras and key limes and ugli fruit (sumo tangerines, huge and bumpy) and so on and so on, you’d think that ordinary navel oranges would come bottom of the exotica scale. Even if they are organic.

The flesh of these oranges was pretty good but not really remarkable–I actually like them a little tangier and more acidic. But the peel! In addition to the usual bitter-aromatic orange peel scent, the oranges all smelled strongly of orange blossom, even after washing them twice. I didn’t know oranges could smell like orange blossom. The peel even tasted like orange blossom water.

So of course I decided I had to take advantage of this oddity by trying the old microwave marmalade trick and making candied orange peel with them.

Like rose water, orange blossom water or essence often seems to me as though it would be better suited to cosmetics than food flavoring. A little is exotic and mysteriously elegant; a little too much, which could be the difference of a couple of drops, can be distinctly soapy.  The essence is sold in tiny opaque blue French bottles in upscale markets like Whole Foods for several dollars apiece, but it’s also sold in 12-oz bottles for 2-3 bucks at my local Armenian grocery, presumably because most of the customers use it so much more often in all kinds of fillo or almond- or pistachio-based desserts.

But here I was with orange-blossom-scented oranges, the native article, organic no less. If they were awful as candied peel or marmalade, at least the microwave method meant I wasn’t going to be wasting tons of time or effort, and only a little sugar. So I washed two oranges well, took the outside layer of the peel off with a sharp knife and sliced it into thin shreds.

I find that skinning the navel oranges with a sharp knife and taking only a little of the white pith with the peel is better than peeling first with my fingers and then shredding the whole peel with tons of pith attached–somehow they cook through better in the microwave method, absorb the syrup better, and gel a bit better as marmalade.

So anyway–I poured a bit of water on the shreds in a soup bowl, covered the bowl with a saucer and microwaved a minute. The water I poured off was greenish yellow and smelled like orange blossom–tasted like it too.  But the peel still smelled like it as well, so not all was lost. I covered the shreds with about 1/3 c. or so granulated sugar, drizzled on a little water to wet it down and squeezed half a lemon over it all. Covered the bowl with a saucer and microwaved about 4-5 minutes. Very heady scent and beautiful flavor, and somehow not soapy, thank goodness. Might have the lemon juice to thank for that, actually.

The shreds sat in their syrup in a covered container most of the day (for me it was forgetting all about it for a couple of hours while letting it cool, but I’ve discovered that it’s also standard marmalade-making practice that helps the syrup gel; who knew?)

The bonus question, of course, is how does it go with chocolate? (that should almost always be my bonus question)

Answer: knockout with dark chocolate. Also very good on toast as marmalade. Something to savor, and the syrup, if I don’t finish it along with the shreds, might go to flavor some almond-paste fillo fingers later this week. Because with something this good, it just seems right to be decadent in small, appreciative doses.

What good is a recipe for this marmalade, though, if you can’t stumble on orange-blossom-scented oranges of your own? I suspect it’s kind of an accidental find, but the fact that orange blossom tastes so good with actual orange peel means that you could make candied orange peel or marmalade and add a drop or two–no more!–of orange blossom to the peel and syrup once they’re already cooked. Don’t forget the lemon juice or a small shake of citric acid (sour salt) to help the preserves last in the fridge. I think the bit of acidity definitely cuts the possibility of soapiness.

On a fresher, lower-carb/lower-cal note, a light (LIGHT!) sprinkling of orange blossom water goes very well on orange slices you intend to use on green salads. One I sometimes make for parties: sprinkle cross-wise slices of several oranges with a tiny bit of orange blossom water. Let them sit a few minutes, then arrange the orange slices on a bed of oil-and-vinegar-dressed romaine and other greens on a large platter, and distribute thinly sliced red onion, red bell pepper, basil and Greek pitted olives  over it all.

Fruitcake and the Jews

A week or so ago, just before the Chanukah madness, my husband brought home what he assumed were The Goods from the local Vons (Safeway chain affiliate on the west coast)–a classic fruitcake, green and red candied citron glowing evilly amid chunks of walnut and raisins and other less identifiable bits and topped with syrupy pecans and glacéed cherries. Tacky as hell, we know. We love fruitcake anyway.

Why do Jews like fruitcake more than Christians do? You know, the kind of indestructible fruitcake everyone jokes about passing off to some unsuspecting cousin after having received it 20 years earlier and having kept the tin in the closet all that time underneath some shoes. The kind the British refer to as “doorstop”. The kind all modern cake blogs decry when they present their own lighter, cakier, less fruity and less chewy version as “fruitcake you’ll actually like.” THAT fruitcake.

Well. Private Selection or not, the cake from Vons was…I don’t know if there are new legal restrictions on using rum or bourbon or other booze as a baking ingredient these days (or ice cream flavor; hard to find Rum Raisin anymore). Maybe it’s a California-does-rehab thing, or just a huge downgrading of quality, but it. Was. Awful.

No rum. No bourbon or other appropriate flavoring. Instead, the loaf was permeated with an aggressively soapy flavor/odor (we couldn’t even tell which), horridly artificial and perfumy like fruit-scented liquid hand soap. Or that overpowering Dove soap I always hated as a kid. You couldn’t even taste the raisins or walnuts, which by all accounts, including visual inspection, were present.

We were, perhaps for the first time ever, not tempted to eat any more, not even to try a tiny second taste the next day to see if it was really as bad as we thought the first time. Just passing the open packet on the table was enough to convince us the bar of Dove that must have fallen into the batter was still giving that loaf its younger-looking complexion. After several days of forlorn looks in its direction, we actually threw it out.

In any case, I’ve been looking for a trustworthy recipe for fruitcake ever since and not succeeding much. In a place where there is no fruitcake, strive thou to make taka a fruitcake. (Not exactly sure what the “taka” part means in Yiddish; the way my mother says it, it means something like “especially” or “such a”, but less polite and more ironic, as you might use it when pointing out how incredibly garish and over-the-top the neighbor’s Christmas lights are with the Continue reading

When life hands you sour cherries, pit them!

Vishniak–I’m probably spelling it wrong–is sour cherries turned into a compote, a syrup, a soda (as in, Frank’s Cherry Vishniak from Philadelphia), or a cherry brandy.

How do I know, you ask. Ah–(and with the “Ah” I’m pulling a Dad and giving you the flavor of a particularly smug conversation he had explaining it all to me when I was 15 and had never heard of vishniak either). Because my mother’s father, as it turns out, had made a particularly fine cherry vishniak by accident, about 20 years before this story begins.

My Grandpa Abe came to the States in 1923 as a child from a harsh place whose main compensations were family, music, tea, Bessarabian grapes, and the cherry harvest. His family had survived the pogroms in the Ukraine, his father had survived being drafted into (probably the Tsar’s) army during the Bolshevik Revolution and decided that was enough already, and the family arrived on the last boat allowed to bring Jews into Ellis Island that year–sometime in August.

The family started out dirt-poor, with no English, stripped of everything by the old Russian and new Soviet border guards. And yet Grandpa ended up a doctor, head of internal medicine, energetic and cheerful, unusually beloved by the nurses in the ICU, and an avid world traveler in his later years (my grandmother was a little less thrilled, but a good sport and better at languages than he was).

Some time in the late 1950s, out on Long Island, a friend gave him a gift of sour cherries, which he quickly put up with sugar and vodka in a sterilized glass Mott’s prune juice jug (why, oh why did all four of my grandparents keep prune juice in the house? I never figured it out. They weren’t even out of their 50s when I was little, and I’m almost 50 now myself.)

But in any case Grandpa put the vishniak jug in a dark, quiet corner of the garage to mature for a couple of months and promptly forgot about it.

He and Grandma moved into a New York City apartment sometime in the mid-1960s, and then in the late 1970s, when I was 15, he retired and they moved back out to Long Island. My family came up to help them sort things out–and that’s where my dad started rooting around among the boxes in the garage and found a dust-caked jug with a faded Mott’s label and some dark reddish liquid and cloudy, lumpy slush at the bottom.

“Abe!” he said, horrified. “What are you doing keeping this old jar? And what the hell’s that stuff at the bottom?”

My dad had just spent at least an hour finding similarly dubious-looking treasures of neatly folded foil, rubber bands, wax paper, and other saved-up sundries that my ever-careful grandparents had paid good money to have moved back out of the New York apartment. Was this yet another such item meant to ward off the next Great Depression, or was Grandpa collecting surgical specimens for posterity?

My grandpa took one look at the cloudy jar and beamed–it had all come back. In true shtetl fashion, he uttered the magic word–“Ah!”–and with no further explanation, bustled around in the kitchen to find a couple of sherry glasses that weren’t too dusty. Dad wasn’t looking too thrilled.

In even truer shtetl fashion, Grandpa returned and promptly challenged my dad to a game of chess to celebrate. We kids were left baffled, but not for long–as the game was set out, we each got a tiny sip, and it was incredible.

It turned out that forgetting the cherry vishniak for 20 years or so was the best thing Grandpa could have done to it. When Grandpa opened the jar the vishniak aroma alone was so developed, so rich, that Dad just stopped kibbitzing in his tracks for a minute and inhaled reverently. The liqueur was a clear bright red–astonishing after 20 years–and at the bottom were all the brandied cherries. When it was time for us to leave, Grandpa filled us a little Paul Masson carafe (remember those?) with vishniak to take home.

Now, I don’t have the head for anything more than half an inch of wine–and that’s actually something I inherited from my dad more than my mom–but my local Armenian grocery was selling fresh sour cherries this summer and I managed to snag a box. What to do with them? I washed and stemmed them, then stuck them in the fridge until I figured it out.

This was not really a great move. They sat for at least 3 weeks in there–it’s a miracle more of them didn’t go moldy, but I lost quite a few when I finally opened the container today. The price you pay for dithering. I sorted them, washed the good ones really well and pitted them with a sharp little paring knife. But what now?

I have a bottle of vodka from years ago–still unopened, maybe I’ll use it next summer and put up some vishniak. But there aren’t enough cherries this time around. So I decided to try making a quick preserve the way I do with cranberries.

The raw cherries aren’t really that sour–they’re more bitter with a faint sweetness, like the wild unofficial and unrecognized variety that used to grow at the edges of the woods in the backyard when I was a kid in Virginia. But I decided to try them anyway.

I had a smallish bowlful–maybe a cup, cup and a half, of pitted cherries–and put a couple of tablespoons of sugar on them. Lemon–no lemons in the house. Citric acid “sour salt” I had in a shaker–you can get Rokeach brand in the Jewish section of your supermarket’s International Foods aisle, next to the Telma bouillon cubes and the unsold jars of Manischewitz gefilte fish from last Passover. But a little goes a long way–one modest shake was plenty.

Then–you won’t be entirely surprised at this, but I covered the bowl with a saucer and nuked it for 3 minutes on HIGH. It didn’t gel–I think you need a lot more sugar to make it gel without adding pectin–but it did make some liquid, and the smell–I’d taken all the pits out carefully before microwaving, but there was still a distinctly almondy smell when I moved the lid a little. Powerful stuff.

A tiny taste–heady and bursting with cherries. With more sugar, more cherries, and a bottle of vodka to add it to, in 20 years it might be worth talking about. But in my house it’s not gonna last that long.

I’ve learned my lesson–if you’ve got something rare like fresh sour cherries at a good price, get with it and use them right away. You can freeze them after you pit them, or you can cook them–or put them up with sugar and vodka, though I don’t think Mott’s is still issuing its juices in glass jugs, more’s the pity. The main thing is to act swiftly, and if anyone gives you trouble, threaten them to a game of chess.

I did it. It was 90+ degrees outside yesterday afternoon and felt a lot hotter inside when I started cranking the oven to try this dish right away rather than wait for the weekend, but I’m just no good with delayed gratification.

If I have the mini-eggplants and I have the quinces and I have the tamarind concentrate (homemade! two days ago! it’s practically crying out to be used already!) and I have the “hashu” filling for the vegetables sitting in the fridge smelling wonderful, then it just doesn’t matter that Rosh Hashanah dinner is in what, maybe 3 hours, and I still haven’t braided the challot, to say nothing of baked them. Obviously I’ve gotta try this extra-credit dish out RIGHT NOW.

Actually, I figured the house was going to be heating up anyway once I started baking the challot, so why not get it all over with at once?

There was a more serious reason to try it. Today in services I was still thinking about Dweck’s book and her recounting of her parents’ horror in 1947, when, about to return from a vacation in Europe, they learned the government back home had started massacring whole Jewish communities in reaction to the announcement that the UN had accepted Israel as a Jewish state.

The Syrian Jewish community fled wherever they could–just as my family did under the pogroms in the Ukraine back in the 1880s and 1920s. Dweck maintains that the reception the Syrian Jews got in the US from those of us who were already here was so aloof–they didn’t speak Yiddish, they didn’t look the same, they did a few things differently for kashrut and prayers–that her community kept to themselves ever after.

I can believe it, unfortunately–the period right after World War II and the Holocaust was one of paranoia and circling the wagons for American Ashkenazim.

Eastern and Western Jews had similar discomfort with each other in postwar Europe. Reading between the lines a little in Claudia Roden’s and Colette Rossant’s memoirs, the two, who had just lost everything, thought their new Ashkenazi neighbors were cold and inhospitable and indifferent to their exile; the Ashkenazi neighbors and relatives, meanwhile, thought the wealthy young Egyptian arrivals were horribly spoiled and indifferent to the European disaster they had just missed. Altogether, the Ashkenazi, Sephardi, and Mizrahi communities were in closer touch before World War I than they were after the 1940s.

I can only hope that now, 60 or 70 years on, we have more in common and more regard for each other, no matter where we came from. Israel’s great mix of cultures has been a good influence, even though it originated in hardship, and perhaps today we are in better shape to appreciate what we have in common than we have been for nearly a century.

When I look through Dweck’s family’s photos, I see so many people who look astonishingly like several members of my family–my dad and my sister especially. The dignified lady presiding at the seder table on the front cover is a shockingly exact adult version of a girl I knew from my synagogue’s youth group–it’s the sturdy mouth and chin and the set of the eyes, certainly, but also the irrepressibly thick and curly hair (the 1920s formal chignon has it all over my friend’s 1970s braids, which took her hours to corral her hair into). The formal photographs of families in the 1920s, all the daughters dressed beautifully but in the same fabric the mother is wearing, sailor suits on the boys, stern dignified expressions all–I’m pretty sure each of my grandmothers had at least one of those in her collection. The 1930s-era engagement portrait with pearls and bobbed hair–so modern! Pin it up next to the one of my dad’s parents, who married in 1939 and looked so incredibly naive and young then. The family gatherings at Pesach, grandma presiding over the white lace tablecloth and all the seated cousins glancing behind them at the camera from over their shoulders–there’s probably one or two with my mother as a toddler on someone’s lap in Brooklyn and another of her as a teen, whipping her glasses off and blinking myopically for the photo. It could be any of our families. It could have been us in Syria and Egypt and Turkey, it could have been them in the Ukraine or Germany or Poland. We none of us have entirely safe histories, and none of us are entirely separate.

In any case, Dweck’s book is important to me not only for capturing her community’s traditions, tastes and history but for reaching out to the rest of us and giving us a chance to share it, compare it with our own, and reconsider what it means to be part of the Jewish world now.

So–and this is not to trivialize but to explain, since we sometimes live and remember through food, especially at the holidays–it was a great time to try out a challenging dish (challenging for me, anyway) from her book and serve it last night to my family for Erev Rosh Hashanah. I cook from scratch, I cook a lot, but I’ve never really done  the legendary great-aunts-at-Pesach kind of slow cooking where everyone groans in pleasure and declares “nobody does it like this anymore” when they taste it. I’ve only once cooked a whole turkey, and I’ve rarely tried anything else that took more than an hour and a half to cook. It’s a transformative experience, one that teaches me a lot about my great-aunts and great-grandmothers, both in the shtetls with the wood-fueled pripitschoks and communal ovens, and here in America with modern kitchens and big lace-covered tables. Trying this long-cooked dish gave me the chance to experience both my family’s past celebrations and Dweck’s at the same time.

To my very great pleasure, her recipe worked the way it was supposed to on the first try and tasted like the effort was worth it, even though her instructions are pretty simple and brief. That’s a huge achievement.

The “Stuffed Eggplants with Quince” Experience

First of all, let me just say that I LOVE my local Armenian corner grocers for a lot of reasons, but the fact that they have all the ingredients for Dweck’s dishes (other than kosher meat, that is) is a big, big plus.

I would have tried microwaving–and I still will–instead of a 2-hour braise, but I wasn’t sure how it was supposed to taste, whether microwaving would cook the raw rice in the filling well enough, and how the sauce was supposed to interact with the stuffing and the eggplants. I knew from a previous hard-luck experience that quinces don’t do especially well (or even well at all) in the microwave and really need long stewing under conventional heat to get tender and turn bronzy pink and sweet. So all in all, I decided following the directions in Aromas of Aleppo might be the wiser course for a first try. Even though, from my usual 15-minutes-tops perspective on conventional-heat cooking, Poopa Dweck’s method is glacially, almost outrageously, slow.

Basically, you core the baby eggplants, stuff them with hashu (beef-and-rice filling, rice and tomatoes, or in my case lentils-and-rice), and layer them in a saucepan with quince slices. Then you dilute some tamarind concentrate and add a bit of sugar and salt, pour the sauce over the pan and heat for 10 minutes on the stove until the eggplants start to sweat, add water to come about 3/4 of the way up , simmer half an hour to reduce the liquid and cook the rice in the filling, then transfer to the oven to braise covered for about 40 minutes and then uncovered for another 30. It’s a lot like making brisket, actually.

Dweck gives two allspice-laden recipes for the filling, one for ground beef with rice, the other a rice-and-tomato filling that’s close to what I use for dolmas. I opted to follow the ground beef recipe but substitute an equal weight of cooked green lentils for the meat and add a little garlic. It would work, I was pretty sure, and in fact it turned out to be the best, most delicious part of this recipe–which, skipping to the punchline, was pretty terrific and worthwhile, even for the work Continue reading

The Birthday Project: New Year, New Food

I was born halfway between Rosh Hashanah and Yom Kippur, so on any given year, I could be stuck eating honeycake or none at all on my birthday. I think I’ve had maybe two actual birthday parties in my life. It’s a concept my daughter, born in June, doesn’t get.

But occasionally I luck out–and this year was one of the best. My husband asked what I wanted and I had a real answer–a cookbook I’ve been lusting after at the library and that costs only slightly more than my probable library fines if I don’t return it.

So this is it–feast your eyes, I’ll turn the pages:

Poopa Dweck, a cousin by marriage to Claudia Roden, has edited the New York Syrian Jewish community’s version of a sisterhood cookbook (every synagogue in America’s sisterhood seems to have put out at least one of those) for something like 20 years, only people in her community actually used it frequently. My birthday gift is the 2007 culmination of Dweck’s experience, and it’s just a very beautiful cookbook to leaf through–visually but also for the possibility that when you try the dishes, they’re actually going to work.

It doesn’t take much reading for me to realize that despite the unfamiliarity of some of the flavors–allspice in meat stuffings, tamarind-based sauces–this is the best kind of traditional Jewish home cooking, the kind that has your favorite great-aunts outdoing each other for Pesach, Rosh Hashanah, and other big celebrations. So, somewhat exotic in flavoring but utterly familiar in spirit. (And actually, as I discovered in another Syrian Jewish cookbook, A Fistful of Lentils, by Jennifer Felicia Abadi, a few dishes, like stuffed cabbage with a sweet-and-sour sauce, and manti, a kind of ravioli, are pretty similar to Ashkenazi holishkes and kreplach.)

Like all Jewish great-aunt dishes for the holidays, this dish of stuffed eggplants and quinces comes with two required homework items: the beef and rice stuffing, and tamarind concentrate. The beef I’m not worried about–my first try on this is going to be vegetarian, because I’m not planning on heading out to the kosher butchers in the Valley. I can use a green lentil and rice filling that I already know will taste fine with those flavorings of allspice and cinnamon and onion. Maybe a hit of garlic too, and maybe a bit less salt than for the beef–as I discovered a few weeks ago, with the green lentil sausages, lentils don’t hide the salt flavor as much as beef might.

The other item, tamarind concentrate, turns out to be inexpensive but somewhat unlovely to make–though still something of an adventure. Especially for a blog called Slow Food Fast.

Now, I’m not all that squeamish, but bleaaghhh. First ya gotta soak the stuff overnight, then ya gotta get in there and mish around–I dunno. I decided to speed it up where I could…

I thought about the little 1-lb. brick of pressed seedless tamarind pulp I’d bought from my Armenian greengrocers for this dish. It just seemed like a tougher version of dried prunes or apricots, which I usually soak up successfully enough in a few minutes by heating them with water in the microwave. Would it work here or would it ruin the flavor? I cut off a chunk, submerged it in water in a microwaveable bowl, and tried it.

Five minutes of microwaving, covered, plus about 20 minutes sitting time–it was definitely done. And really, really incredibly tart, a surprise given tamarind’s distinctly plummy aroma. Success! But no wonder they call it “ouc” (pronounced OO-rgh, according to Dweck)–that was my immediate reaction when I tasted a tiny sip. It’s THAT sour. My second reaction was that I should probably say Shehekheyanu–the blessing for any new venture, especially for holidays and the first taste of a new fruit in the year.

I realized only afterward that I should have done the whole brick while I was at it–I was about to discover why Dweck calls for preparing three pounds of pulp at a time, not a couple of ounces.

Next step–squishing the pulp in the water to extract as much flavor as possible before filtering through cheesecloth and reextracting the pulp left behind in fresh water…no. Just no. I am not a cheesecloth girl–it never, never cuts neatly, even with Fiskars shears.

So, I was thinking, I have a microwave for a reason. I also decided I have a food processor for a reason, and this is definitely it. I stirred once with a fork first to make sure there really weren’t any pits in there, as advertised on the package front. Then I poured it all into the food processor, and gave it a whirl. That worked too. I seemed to be on a roll with the speed-it-up-immensely daydream.

Filtration–I’ve used overlapping coffee filters in a colander whenever I make paneer in the microwave, and it worked pretty well here too–maybe better than Dweck’s photos, which show a cloudy filtrate coming through the cheesecloth. Mine was clear and amber–maybe too clear? Was it going to taste authentic without the silty stuff? I could only hope. It sure was sour, even dilute as it was. Continue reading

Ice cream, enhanced

Sometimes your kid sees a new flavor of Dreyer’s ice cream at the store and decides she has to try it because “It’s Black Raspberry, Mom!” and it’s on sale. But mostly because it’s a trendy light purple (“Orchid or thistle?” I asked, calling on my distant memories of the Binney & Smith guide to the universe.  “Lavender” she retorted. I caved to her superior fashion sense.) It was made with real raspberries–that’s a plus, I suppose. And it came in a “half-the-fat” version, and it was enough on sale that I could get a safety flavor as well.

It’s been over 100 degrees here in Pasadena this week, so ice cream is practically a medical supply.

When we got it home though, it tasted sweet and kind of dull. The fruit flavor was there but not particularly strong, and the overall effect–particularly the smell, for some reason–reminded me suddenly of those horrible “berry-flavored” motion sickness lozenges my mother used to foist on us just before long car trips. Bonamine? I’m still shuddering forty years later.

My daughter, blissfully free of Bonamine-induced associations, still thought it had merit, though, so we kept the lavender-tinted ice cream and I wondered whether anyone else would eat it without having to be threatened. What was wrong with it and could it possibly be fixed?

I’ve been potschkying around with store bought ice cream pretty much ever since I was old enough to buy it for myself–adding extra cocoa powder and some mint or almond extract to chocolate, leftover coffee and cinnamon to vanilla, and on and on. Not many people do this, or do this enough, I’ve discovered. You have to wonder why not, because most non-super premium ice cream in America is a little, or a lot, bland.

In fact, the only flavor I never messed with was Ben & Jerry’s Coffee Heath Bar Crunch, which was perfect and sublime and needed no help ever, other than a spoon. My husband and I were such devotees that when we had a chance to spend a late-summer week in Vermont and New Hampshire one year (way back when, in our 20s), we made sure to stop in at the factory in Stowe for a tour. CHBC was such a supreme flavor that I only gave it up when Ben and Jerry both retired and a new CEO took over. Somehow, the next pint I bought tasted a little off–weak on coffee flavor or something, hmmm…I looked at the ingredients and sure enough, they’d changed the formula and flavorings. It had also been monoglycerided down, even though the fat count was still in the stratosphere. I’m sure my ice cream snobbery saved me from a decade of extra arterial damage, but I’ve been sullen and resentful ever since (or at least that’s the explanation this week).

So anyway–back to the prosaic purple ice cream. It needed something–tartness–to liven it up, and probably would have been better as a frozen yogurt. Come to think of it, would yogurt work? Naah. Messy. Plus refreezing time. Lemon? Maybe, maybe not–it might end up seeming too sweet. Then I found a lime in the fridge–from who knows how many weeks ago; it had already lost its green, but it was still fine inside. Sometimes where lemon’s pure acidity underscores the sweetness and makes it more apparent, lime’s aromatic edge undercuts it and makes the flavor seem fresher. Works for ginger ale, works for blueberry jam…

A squeeze, a stir–from lavender to…raspberry pink (what else?) and I have to say, a BIG improvement in flavor. Much more like actual black raspberry. That’s all it took? Why couldn’t they have done that at the ice cream factory? But they didn’t.

I have another reason for punching up my storebought ice creams, and it’s not just boredom or fidgetiness (though those are obviously tops).

A long-ago-and-far-away gelato-eating expedition in Florence (it didn’t start out that way, but it’s the fulltime occupation in the summer–even more of a medical necessity when you’re wandering outside all day as a tourist) taught me the difference between Italian and American standards for ice creams: Americans expect big portions and don’t really pay attention to the flavor. Bland and sweet is acceptable. Italians are happy enough with small 1/3 cup portions as long as the flavors are wild and adventurous and vivid. If you can taste it well with one of those tiny gelato spoons, a gram at a time, it’ll last you.

Makes you wonder whether the lack of flavor punch in American ice cream (and maybe our other food as well) is the reason we typically eat biggish portions at a sitting, or seek out seconds. If it doesn’t taste like much, you eat it without paying attention, and end up not feeling like you’ve really eaten it. Interesting and vivid flavor seems like a good idea for health and portion control as well as pleasure–if you’re going to have ice cream, after all, you may as well taste it. Otherwise you could just suck on ice cubes.

So–a few suggestions for upping the flavor of store bought ice creams.

Go for plain flavors as your base

Try to find ones that are relatively low in carb and fat for a half-cup serving. Low here means about 15 grams of carb per half-cup, and maybe 2-3 grams of saturated fat.

Not only don’t the dressed-up flavors with loads of mix-ins need (or take well to) further tinkering at home, they’re not always as high in quality. Dreyer’s (Edy’s on the east coast), seems to try to keep the nutrition stats consistent across the line–ice creams with lots of mix-ins and/or caramel-type ribbon swirl are a bit higher in carb, up to maybe 22 grams per serving.

To keep things consistently low, though, the components or the ice cream itself have to compensate–so Reese’s Cup-style peanut butter and chocolate chip swirl has iffy peanut butter and iffier quality chocolate chips (well, so do the real Reese’s ™–don’t know whether authenticity is such a good thing in this case), plus the ice cream’s a bit icy, maybe even a little stale-tasting on occasion. You’d get more intense flavor from vanilla bean ice cream with a few squares of good dark chocolate chopped in and some peanuts or a bit of peanuts-only peanut butter.

Make flavors you can’t buy

Sometimes these are ones you grew up with, like Rum Raisin–I think only Haagen Daz still makes this. People got kind of prissy about feeding ice cream with rum flavoring in it to kids, I guess. Or raisins got too expensive.  So did pistachios, except in super premium ice creams.

No one makes ginger, or lemon-ginger, even though I’m pretty sure those were two of Bon Appétit‘s and Gourmet‘s big summer standbys for at least a decade (and I know because I once bought a decade’s worth of each magazine from my friends-of-the-library auxiliary at about a dime an issue. The seasons change, the same 10 recipes repeat…)

And no one makes Sabra (chocolate orange), or fig, or liquorice, or marzipan, or rose. Or pear. Or chocolate hazelnut with sour cherries.  Or even just plain bittersweet chocolate. There are home recipes for all of Continue reading

I know–highly unappetizing. I don’t think even a full teaspoon of salt would help here. And I’m getting back to actual food as of today, I promise.

But I just had to “share” my inbox this morning before I get started. Borders has now closed its Pasadena store but keeps sending me these fabulous discounts in the pretty hope that I’ll schlep to Arcadia to check them out. What does it say when a huge business that’s trying to stay afloat after two decades of leading the field misses so blatantly in its one-to-one personalized marketing?

For that matter, what does it say (reading the tea leaves here) when Newt Gingrich looks like the most coherent and readable (and properly-dressed) selection? I mean, I was there–in 1995 I started working at NIH and promptly got caught in the federal furloughs when he lost his budget armtwisting attempt on Bill Clinton.

What does it say when the Gritch is allegedly trying to run for president and his soon-to-be-available tome is grouped with those of three other deeply discounted “authors” who have no actual public service background, just a penchant for loud titles and  army drag (of various centuries)? Where the hell did Laura Ingraham get that hat? No wonder she’s not keeping up with Patt Morrison. And I thought French food was a no-no for today’s discerning ultraconservative trougher?

I do also wonder at the significance of Ann Coulter’s latest effort being discounted just that six percent more than everyone else’s…maybe it’s the fact that she’s jumped (appropriately) on the vampire-empire bandwagon? Too bad there are no handsome devils on the cover (almost guaranteed there are none inside either). I’m sure they’d sell like hotcakes. Maybe she’s included an actual recipe for hotcakes (with blood sauce or fava beans or something)?–You never know.  Can she actually cook? Without fatback?

Given the deep and undoubtedly thorough marketing research Borders has done (by sending me of all people this fabulous selection of deals), I’m sure they’ve already figured out which way the wind is blowing. I can smell it from here.

In honor of this great selection, I’ve decided to pull out the stops and dig into the older of my cookbooks for an appropriate response.

Semi-Patriotic Pancakes–No Lard AND No Blood (well, at least no added salt)!

Makes about 16 3-4″ diameter pancakes, enough for 3-4 people

  • about 1 c. bread flour, whole wheat flour, matzah cake meal, buckwheat flour, or any mix of these as desired (to preserve our individual freedoms. Put that gun down, Jeb! We’re talking first amendment, not second!) Generally if you’re using buckwheat or whole wheat, it’s better to go half-and-half with regular flour so the pancakes aren’t too heavy or grainy
  • 2 large eggs, separated–I usually toss one of the yolks but keep both whites
  • dollop of plain milk-and-cultures-only yogurt (for that Mediterranean touch)
  • milk or buttermilk (depending how sour you are, and if you use buttermilk skip the yogurt)–about a cup, but might be more to make the batter consistency come out right
  • 1 T sugar (any color, even green if that’s all you’ve got and can stomach the results)
  • 1 capful vanilla extract AND/OR a shake or two of cinnamon (keep it small)
  • oil or butter –1 T for the batter, the rest for frying

Optional mix-ins: blueberries or raspberries (fresh are good, but if you have frozen ones leave them frozen to add when you fry the pancakes; otherwise make a sauce of defrosted ones to serve at the table instead), chopped peeled apples, pecans, chocolate chips, etc. etc. NO: liver, fava beans, or blood-anything!

1. In a large bowl mix the the flour, sugar, flavoring(s), egg yolks, the tablespoon of oil or butter, the dollop of yogurt if using,  and enough milk or buttermilk to make a thick but just-pourable batter. If you’ve got chopped apples, nuts or chocolate chips, you can mix them in now.

2. In a second bowl beat the egg whites to reasonably stiff peaks, then fold them gently into the batter to lighten it. Start frying as soon as you’ve got this done.

3. Fry 3-4″ dollops (about 2-3T each) of the batter in a large (preferably nonstick) frying pan over medium to medium-high heat. If you’re adding berries, add a few to each pancake as soon as you’ve spooned the batter into the pan, and let the pancake batter rise around and over the berries a bit before flipping to the other side.  You’ll know to start flipping the pancakes when you see the bottom edge start to look solid and a ring of small bubbles appears just above it–but I sometimes go a little longer to make sure because the leavening is egg whites-only, which makes a pretty delicate batter. You don’t want the pancakes to collapse completely.

4. “Stick a fork in ’em, they’re done.”–The late, great governor of Texas, Ann Richards, July 15, 1992, in an interview with David Letterman about the Republicans’ chances, and quoted on page 61 of my swiss-dot cookbook… Incidentally, she was wearing an outfit that puts any of Ann Coulter’s to shame–she had her very, very white hair up in a classic Texas beehive and she was wearing a hot pink miniskirt that she actually had the legs for. I miss her still.

Fruit Rescue Redux: Re-tanging the “Cutie” Tangerine

Farmers’ markets aside, an awful lot of produce isn’t what it used to be–either for vitamins or flavor. Anytime you get to major mass production and long storage times, you know the result is going to be a product that looks like fresh fruit or vegetables but the smell, taste and texture are really missing. Kind of like the long-stemmed red roses bred to last for the Valentine’s Day bouquets–pretty, hardy as hell, but with almost no perfume at all.

Case in point: the Cutie ™ seedless tangerine. About two weeks ago I bought a 3-lb. bag of these things for a congregational hike and Tu Bi’Shevat ceremony in honor of the New Year of Trees, usually in January around the time when almond trees are in blossom in Israel (and California, though that’s a little less official).

The ceremony, other than the basic blessings for the gift of trees and their fruit, is kabbalistic in origin and involves celebrating the different kinds of fruit and tree nuts as a metaphor for different levels of openness and freedom in the soul. Some fruits have a hard stone at their core, others an inedible peel or shell, and the most open and enlightened are fully edible. A full-out Tu Bi’Shevat seder includes a selection of these fruits and nuts in progression from least to most edible, along with four cups of wine or grape juice mixed in four combinations from white to red (or is it the other way around?) to symbolize the approach of spring among other things. I’m not a kabbalist (my family were always “misnageders” or skeptics/rationalists rather than Hasidim) but I can appreciate the poetry of the Tu Bi’Shvat seder.

My family, skeptical or not, also always appreciated a good geschichte (shaggy dog story, preferably minus the actual dog and its hair). So I’m painfully aware you may not think you’ve been hearing enough about Cuties for the past few minutes to make this worth your while. I’m trying here.

My husband came back from the hike with at least half the bag of Cuties uneaten, so I put them in a bowl on the counter and started serving them, hoping to use them up before they went rotten. Because I’m not sure a seedless rotten tangerine is an improvement on the regular kind. Also because our neighbors with a satsuma tree (seeded) had just gifted my daughter with a bag of those. Out here in LA, tangerines are the winter version of zucchini.

Cuties are little and orange and shiny and really easy to peel. Perfect, right? The trouble was, the Cuties had almost no taste. At all. Continue reading
